A renowned Guangzhou-born gourmet, whisky connoisseur, and international culinary judge, initially worked as a civil servant before studying chemical engineering in Australia and the US, then opening his first Howard’s Gourmet Workshop specializing in Chiu Chow cuisine in Guangzhou in 2005. Applying his scientific background to quantify cooking times and temperatures for optimal flavors, Cai launched the Hong Kong branch in 2015, blending Eastern and Western traditions with seasonal, premium ingredients to redefine luxury Chinese fine dining; his innovative, symphony-like menus have earned eight consecutive Black Pearl Three Diamonds and a dedicated celebrity following, while he mentors teams for consistency and creativity.
