Masaru Furukawa, hailing from Miyagi Prefecture in Japan (Sendai area), is a seasoned Japanese chef with over 15 years of expertise in fine dining Japanese cuisine. He honed his skills at renowned Michelin-starred restaurants in Tokyo before bringing his passion to Hong Kong as head chef at Kappo Rin since its opening in 2019. Furukawa's philosophy centers on interactive counter dining, utilizing the finest seasonal ingredients to craft constantly evolving omakase menus rooted in traditional kappo techniques—meaning "to cut and cook"—while complementing rich flavors with innovative condiments, fostering an engaging experience that highlights the inherent qualities of each ingredient.
