Southern French restaurant where owner-chefs Adrien Castillo and Romain Dupeyre revisit their culinary roots through modernized heirloom recipes crafted with seasonal produce from France and Hong Kong

French chef from Nice, began his culinary journey at 15 as an apprentice at the two-Michelin-starred La Chèvre d’Or. With over two decades of experience in prestigious kitchens across France and Asia, he later served as head chef at the one-Michelin-starred Petrus in Hong Kong. In 2022, he co-founded Racines in Hong Kong, a restaurant focused on modern interpretations of southern French cuisine. His emphasis on seasonal ingredients and technical creativity contributed to Racines earning a Michelin star within its first year.
