Antimo Maria Merone
Naples native born and raised in Napoli, Italy, began his culinary journey with a deep connection to his hometown's traditions, spending half his life there before moving to Hong Kong in 2012. He later served as Executive Chef at 8½ Otto e Mezzo Bombana in Macau from 2014 to 2020, earning the restaurant its first Michelin star and retaining it for five years. In 2021, Merone opened Estro, his first independent venture in partnership with JIA Group, where he redefines Neapolitan cuisine by blending modern techniques with personal memories, ancestral history, and childhood nostalgia, using premium ingredients from Italy, France, and Japan to create boundaryless, ingredient-driven tasting menus that evoke emotion and innovation while honoring his southern Italian roots.
