About
French restaurant offering heart-warming traditional cuisine reimagined with seasonal ingredients sourced locally and globally, featuring signature dishes like the roasted Hong Kong yellow chicken served with chicken fat-infused Niigata rice and green salad, in a two-storey heritage building designed by André Fu, evoking a chic colonial residence with a lounge terrace and elegant main dining room.
Chef Julien Royer’s first venture into the kitchen under the legendary Michel Bras in Laguiole instilled in him a respect for the integrity of each ingredient and a commitment to showcasing its brilliant flavours. he then moved to Durtol in the heart of Auvergne, where he began working for Maitre Cuisinier de France Bernard Andrieux who continued to reinforce the beliefs his upbringing had instilled in him. Julien’s culinary career then took him from the French West Indies to Polynesia and London, where he was sous chef to Antonin Bonnet at Michelin-starred Mayfair restaurant, The Greenhouse. He then moved to Singapore, where he has resided since 2011. He launched Odette in partnership with The Lo & Behold Group in 2015, which combined his core culinary values of quality produce, honest cooking and genuine hospitality. The restaurant has since clinched Three Michelin stars and in 2019 took the spot of top restaurant in Asia’s 50 Best and #18 in the World’s 50 Best awards.
