Born in 1985 in Córdoba, Argentina, to Italian immigrant parents, left home at 18 to pursue cooking, training in renowned kitchens like Arzak in San Sebastián, The Fat Duck in London, and Magnolia in Italy before opening La Bottega in Geneva in 2015 (one Michelin star) and Amelia in San Sebastián in 2017 (two Michelin stars by 2021). Named after his daughter, Amelia reflects his modern Italian style with global influences; expanding to Hong Kong with Amelia HK in 2019 and Noi in 2022 as his Asian flagship, Airaudo's philosophy emphasizes seasonal, artisanal produce, creativity without trends, and cultural storytelling through dishes that fuse his heritage with Asian elements, earning Noi two Michelin stars shortly after opening while overseeing a portfolio of 14 global venues.
